My month of January was filled with almonds — a full bag of them on my desk at work, almond milk in cereal and a lot of almond substitutes in the meals I made.

I spent the month of January following a vegan diet, pretty strictly, for the first time in my life. I had a lot of reasons to be vegan, but mostly it was for the environmental impacts of a vegan diet.
